Coconut Date Rolls (raw vegan & gluten-free)

These babies are the bomb. Not only are they super quick and easy to make (a couple of minutes tops), they're also one of the simplest, yummiest raw treats that i know. Only two ingredients: dates & coconut.

This recipe was inspired by the wonderful Steph (one of THE most amazing, inspiring young vegan humans on instagram!). Since she didn't provide any instructions nor exact ingredients for her recipe (other than the two i listed above), i had to come up with my own ratio of the two. 

And it's a marriage. A beautiful, made-for-one-another marriage.

Or to put it in Steph's words: it's the perfect snack "when I'm in a hurry, when I'm bored and want to snack, when I'm cramming for exams and need a midnight snack, when I need a pre workout snack, and when I need something to brighten my day and make me happy".

COCONUT DATE ROLLS

Preparation time: 5 mins
Main ingredients: dates, coconut
difficulty level: easy
makes: around 12 rolls
suitable for: vegan, lactose-free, gluten-free, nut-free, raw food, and delicious "even so"

Ingredients

around 250g soft dates (if not soft, soak in hot water for 15 minutes)
around 30 to 50g shredded coconut
around 1 tsp of Maca powder (optional) *

more shredded coconut for coating

Instructions

Before preparing, soak dates in warm water for about 15-30 minutes. Drain dates and in a food processor, then add coconut and mix them to a sticky and smooth dough. If it's all too sticky, feel free to add more coconut! 

* I also added a bit of Maca powder because it is widely used to promote sexual function of both men and women since it serves as a boost to your libido and increases endurance, and since i made this for my boyfriend's and my monthly anniversary... you know, why the heck not :D

Then roll into -well- rolls, and -erm- roll the rolls in shredded coconut (great job explaining, Maisy, haha!). Eat them straight away, or place in the refrigerator for 30-60 minutes or so to firm up. These are perfect to share with your loved one :)

Store in the fridge.

TIPS:
Instead of shredded coconut, use raw cocoa powder or carob powder.
Add a teaspoon of almond butter or other nut butter (always a great idea).
Perhaps mix in a squeeze of orange juice for a more wintery, Christmasy flavor. And cinnamon!
