Weekly Meal Plan CW 51

Hey guys,

since Christmas Eve and Christmas Day are coming up this weekend, I thought it would be the best time to share what I've been eating for the past week. Hopefully this will serve as inspiration and motivation to eat as healthy as possible over the holidays :)

What's on the menu?

- On Monday my boyfriend and I tried Spanish chickpea stew for the first time, and it was super yummy! Served this with basmati rice. We will definitely be making those more in the future :)
 
- Tuesday we did the (vegan) German way of preparing kale: cooked with loads of onions, potatoes, vegetable broth and tofu marinated in soy sauce. Sooo good.

- On Wednesday it was my turn, and I made fried potato slices with green beans and zucchini. Super easy to make and very yummy.

- Thursday we were feeling a bit lazy and reached for our quick and easy kidney bean burger recipe.

- For Friday we have another very German winter meal: red cabbage with apples and tofu, served with potatoes and lentils. It's slightly sweet due to the apples, but also savory and salty due to the marinated tofu and spices. Similar recipe over here.

- For the weekend we are having mainly leftovers since we are going to eat LOTS of food at each our families over the next few days, but we're also going to make a little loaf of orange cranberry bread (video recipe over here), sweet potato fries and my favourite polenta porridge for breakfast on Saturday :)
